Cherry is one molecule. Strawberry is more than 350.

On our page for the Cannapower cherries we set out why cherry confectionery tastes faintly of almond: the flavour industry built artificial cherry around benzaldehyde, a single compound that carries most of the identity by itself. One molecule, one recognisable flavour, easy to reproduce.

Strawberry is the exact inverse, and that is the whole story of this sweet.

Plant-science literature puts strawberry aroma at more than 350 separate volatile compounds. Esters, furanones, terpenes, aldehydes, ketones, alcohols and even sulfur compounds all contribute. The ones named most often as major contributors are furaneol and its derivative mesifurane, which supply a caramel note, along with methyl anthranilate and the methyl and ethyl esters of butanoic and hexanoic acids.

Crucially, no single one of them dominates. There is no strawberry equivalent of benzaldehyde, no soloist you can isolate and put in a bottle and have people recognise instantly.

That is why artificial cherry is convincing and artificial strawberry usually is not. Reproducing a solo is straightforward. Reproducing a choir of 350 voices, in a sweet, at a manufacturing scale, is not something anyone has managed.

So a strawberry sweet is not a bad attempt at a strawberry. It is a sketch of something that would need hundreds of lines to draw properly, and everyone in the industry knows it.

The compound named after a group it does not contain

Faced with a flavour that cannot be reproduced honestly, the trade did what industries do and found a shortcut.

The signature compound in artificial strawberry flavouring is ethyl methylphenylglycidate. In the flavour business it is called strawberry aldehyde, or sometimes Aldehyde C-16.

It is not an aldehyde. As the chemical literature puts it plainly, the compound lacks the presence of an aldehyde group entirely, containing ester and epoxide groups instead. It has carried a misleading nickname for a century and the industry has never bothered to correct it.

Its aroma is documented as sweet, fruity, strawberry, floral, honey and fatty all at once, which is a fair description of what a strawberry sweet actually tastes like when you pay attention. Not really fruit. Something sweeter, rounder and more perfumed than fruit.

It is a synthetic flavouring compound and it turns up well beyond confectionery, in perfumes, soaps, detergents and cosmetics, which is another clue to what it smells like.

Cannapower's published panel for this range lists fruit juice concentrate, apple at one per cent and natural fruit and vegetable flavours, so we are not telling you this bag contains that compound. We are telling you what the strawberry sweet flavour you recognise was built on, because that recognition is what any strawberry sweet is trading against.

Everything this brand flavours is a rose

Here is something we noticed only when we had written about every flavour in the range, and it is genuinely true.

The strawberry belongs to Fragaria, a genus in Rosaceae, the rose family. So does the cherry, so does the peach, and so does the apple that appears at one per cent in this range's ingredient panel. Pears, plums, apricots and raspberries are in there too.

Which means every named fruit Cannapower flavours its gummies with is a member of the same botanical family. Not a coincidence exactly, since the rose family supplies an enormous share of temperate fruit, but not something anyone has ever pointed out on a sweet packet.

The strawberry is the closest of them to an actual rose. It sits with the garden rose in the Rosoideae subfamily, sharing the trait that gives it its odd anatomy: multiple unconnected pistils that develop into achenes.

We wrote about the Prunus genus on our cherries page, where cherry, peach, apricot and almond turned out to share a kernel chemistry. This is the level above that, and it is the level that can take in the strawberry, which Prunus cannot.

A strawberry is not a berry, and its seeds are not seeds

While we are here, two things about the fruit that almost everyone has wrong.

A strawberry is not botanically a berry. It is an accessory fruit, which means the red flesh you eat is not fruit tissue at all. It is a greatly enlarged flower receptacle, the swollen tip of the stem that the flower sat on.

And the little yellow specks on the outside are not seeds. Each one is an achene, a complete one-seeded fruit in its own right, with the actual seed inside it.

So a strawberry is a swollen stem tip studded with a couple of hundred separate tiny fruits, and the part you throw away on a raspberry is the part you eat on a strawberry.

Sweet manufacturers reproduce the shape and the colour and ignore all of this, which is fair enough. But it does mean the moulded strawberry in this bag is a model of a flower stem, not of a fruit, which is a slightly better piece of trivia than a sweet packet usually supplies.

What to expect, and the numbers

Of the five shapes Cannapower makes, the strawberry is the one that reads most directly as its fruit, which is worth saying after everything above. Not because the flavour is faithful, but because the reference is unambiguous. Nobody eats one and wonders what it is meant to be, which is more than can be said for the cherries.

Expect sweetness first, a rounded and slightly perfumed fruit note behind it, and the clean pectin break we describe on our fruit cubes page. The two acids in the panel give it a light tang rather than a sour edge.

On the numbers, this is a 125 gram bag with 1200mg stated across it, alongside a 400mg version in an identical pack. Our two bears pages cover the arithmetic properly and both apply here unchanged, including why a bag-total figure is hard to act on when no piece count is published.

One thing carried over from our other pages in this range. Our catalogue records this row as a CBD isolate while the manufacturer's published panel says broad spectrum. We found the same mismatch on the cubes and the rings, so it is a range-wide error on our side and we are correcting it rather than quietly picking whichever suits.

Who should buy something else

If you want a sweet that tastes like a fresh strawberry, nothing on any shelf anywhere is going to give you that, and now you know it is a problem of chemistry rather than of effort. Manage the expectation and the sweet is perfectly good on its own terms.

If you find perfumed or floral notes off-putting, strawberry confectionery leans that way by construction. The cherries or the fruit cubes are both further from it.
